Blue Cheese Stuffed Mushrooms
6 large mushrooms
1/4 red onion
40g blue cheese - choose your cheese depending how strong you like it
1 tsp garlic flavoured oil
Remove the stalks from the mushrooms and dice finely.
Finely dice the onion and gently sauté in garlic oil.
When the mushrooms and onions are softened, remove from the heat and crumble the blue cheese into the pan and stir well to mix.
Fill the mushrooms caps with the mixture and serve.
